David's Eggstraordinary Egg Salad


6 hard-boiled eggs
1/4 cup mayo
1 tsp. dijon mustard
dash parsley
pickle relish
splash of pickle juice or lemon juice


To boil eggs:
* Put eggs in pot
* Add water to cover at least 1 inch over the top
* Add a tablespoon of salt (this stops the albumin from seeping out if the eggs crack)
* When the water starts to boil, turn heat to very low
* Boil 20 minutes? (or, as Dave says, "Until they tell you they're done.")

Lightly chop the eggs
Mix in other ingredients - add ingredients to taste (extra mustard is nice)
