1 cup dry couscous
2 tsp olive oil
1 lb shrimp, peeled and de-veined
1 (14 oz) can stewed tomatoes with green pepper and onion
1/2 cup black olives, pitted and chopped
1/2 cup feta cheese
2-3 tsp Greek seasoning
(original recipe called for 1 tsp garlic and herb seasoning, 1 tbsp dried mint leaves, and 1 tsp dried oregano)
dash or two garlic powder
salt and pepper to taste
Cook couscous in a saucepan according to package instructions
In a separate pan, place shrimp, olive oil, tomatoes, olives, feta cheese, and spices.
Simmer about 5 minutes to cook shrimp and heat through.
Season to taste with salt and pepper and serve over couscous.
