Dave's Greek Style Shrimp

INGREDIENTS

1 pound peeled, deveined shrimp
2 Roma Tomatoes, seeded and diced
4 cloves garlic
1 shallot, finely diced
4 oz. feta cheese
1/2 tsp freshly grated ginger
1/2 tsp oregano
1/2 tsp basil
1/2 tsp parsley
3 dashes crushed red pepper (or to taste)
1 tbsp olive oil
1/4 cup white wine

INSTRUCTIONS

Brine the shrimp for an hour. (Put a tablespoon of Kosher or sea salt in a cup of water. Dissolve the salt in the water, and then pour the water over the shrimp. There should be enough to cover the shrimp. Stir every 15-20 minutes to make sure they all get soaked sufficiently in the solution.)

Drain out the brine. Rinse once.
Put the olive oil in a frying pan. Sautee the shallots with garlic and ginger until soft. Add the shrimp and the rest of the spices and stir fry until shrimp are cooked.

Dump the shrimp into a baking tureen/casserole dish. Add the wine. Stir in the diced tomatoes. Top with Feta cheese. Bake at 400 degrees for 15 minutes.
