1 pound potatoes, peeled and chopped
6 ounces mushrooms, cleaned and chopped
2.5 ounces / 1/3 cup olive oil
2-3 cloves garlic
2 shallots, chopped
2 tbsp parsley, chopped
Set the potatoes to boiling in a pot of water on the stove. Cook until tender.
Heat a frying pan with some olive oil in the bottom.
Add the shallots and sautee until they are transparent.
Add the mushrooms, garlic, and parsley, and cook until the excess water from the mushrooms has evaporated.
Add the mushroom mixture to the potatoes, and mash them all together.
When serving, the potatoes look nice scooped with an ice cream scoop and garnished with a bit of parsley.
