Mouse's Beer Cheese Soup for One

Servings: One

Scale it up, if you'd like, but this is warm, yummy, and quick to whip up when you want to savor a delicious moment alone.


1 tbsp butter
1 tbsp flour
1 tsp fresh minced garlic
3/4 cup milk
1/4 cup beer (I use a nice amber bock or something similar)
1/2 cup shredded extra sharp cheddar cheese
dash of salt
dash of pepper
dash of worchestershire sauce
dash of chili powder, red pepper, hot paprika, or similar substitute


Melt the butter in a saucepan over medium heat.

Stir in the flour until smooth. (Do not brown the flour. If you need to, remove from heat while you stir.)

Add the garlic, then the milk, the beer, the cheese, and finally the spices to taste. Stir until the mixture thickens to the desired consistency.

Best served with warm, crusty bread (a bread bowl is even better) and the remainder of the beer you used to make the soup.
